Bean meal

Ingredients:

  • 500 g beans
  • 100 g soy
  • 3 onions
  • 3 tomatoes
  • 3 tablespoons oil
  • 3-4 cloves of garlic
  • paprika
  • thyme
  • 1 bay leaf
  • 4 tablespoons tomato paste
  • 3-4 tablespoons oil
  • salt and pepper

Method of preparation:

The beans are left for at least 8 hours to soften. Afterwards, the beans are removed and boiled in 2-3 waters, to remove all toxins. After boiling the beans, drain into a sieve.

During this time, the onion is cut, the garlic is crushed and set to simmer in an oil pan. When the onion has become glassy, add the beans, soaked soy and a little water.

Separately, prepare the tomato paste with salt, pepper and thyme, and if the paste is too thick, add a little warm water and pour over the beans. Also add a bay leaf and leave to simmer. It is served with pickles and garnished with green parsley.
